Father's Day Beer and Butter Shrimps Foil Packs:

Yes, beer and butter can be healthy! And a little goes a long way in this simple low calorie shrimp dish, which is perfect for Dad’s special day. All of the ingredients are sealed up in a foil packet so the flavour can’t sneak out. It cooks up in just minutes, so there’s more time to spend with Dad!

Beer-and-Butter Shrimp Foil Pack

Serves: 4

1 1/4 pounds of peeled and deveined large shrimp

1/2 cup of Dad’s favourite lager-style beer

juice of 1 lemon

5 smashed garlic cloves

2 tablespoons of unsalted butter in pieces,

1 teaspoon Old Bay seasoning

Kosher salt

Preheat a grill to medium heat. Lay out a large piece of foil and spread out 1 1/4 pounds of peeled and deveined large shrimp in the center of the foil. Pour in 1/2 cup of Dad’s favourite lager-style beer (give him the rest to drink). The add the juice of 1 lemon (throw in the lemon halves too), 5 smashed garlic cloves, 2 tablespoons of unsalted butter in pieces, 1 teaspoon Old Bay seasoning and a sprinkle of kosher salt. Top with another large piece of foil, crimp and fold the edges together to seal tightly. Transfer the foil pack to the grill, close the lid and cook until all the shrimp are pink and cooked through, 4 to 6 minutes. Let sit for a few minutes and then, careful of the steam, rip the packet open. Serve with boiled potatoes or corn. Sop up the juices with crusty whole grain bread or cornbread.
